  • 1.25 cups oat flour
  • 1 cups pumpkin puree
  • 0.75 cups Greek yogurt
  • 2 large eggs
  • 0.5 cups vanilla flavored protein powder (~50 grams)
  • 0.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 cups dark chocolate chips

Method
 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Add the oat flour, pumpkin puree, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda to a large mixing bowl and stir with a hand mixer or wooden spoon until combined.
  3. Stir in the chocolate chips, saving some to sprinkle on top.
  4. Distribute into 12 greased muffin liners.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
