Ingredients
  

Vegetables and Seasoning
  • 1 cup pastina pasta
  • 1 unit brown onion
  • 2 units carrots
  • 2 sticks celery
  • 4 cloves garlic
  • 6 cups vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 1 leaf bay leaf optional
  • 1 rind parmesan optional
Garnishes
  • Chopped parsley optional, for garnish
  • Grated parmesan cheese optional, for garnish
  • Drizzle of olive oil optional, for garnish

Method
 

Cooking Instructions
  1. Roughly chop the onion, carrots, celery, and garlic cloves.
  2. Pour the vegetable broth into a large pot and add the chopped vegetables, bay leaf, and parmesan rind. Season with salt and black pepper, then cover and simmer for approximately 20 minutes over medium-high heat.
  3. Check that the vegetables are cooked. Remove the bay leaf and rind, then strain out the vegetables through a slotted spoon or colander.
  4. Add the cooked vegetables to a blender with ½ cup of water and blend until smooth.
  5. Pour the blended vegetables back into the pot with the vegetable broth and stir through. Taste for seasoning.
  6. Bring the soup back to a boil, then add the pastina pasta. Stir the pastina every minute to prevent it from sticking to the bottom. Cook for about 5-6 minutes.
  7. Serve in bowls, optionally garnished with chopped parsley, grated parmesan cheese, and a drizzle of olive oil.

Notes
