Ingredients
  

Dough
  • 2 cups strong bread flour 280g
  • 2 cups 00 flour or all-purpose flour 280g
  • 3 large eggs
  • 6.5 tbsp butter, softened 90g
  • 1/2 cup granulated sugar 100g
  • 1/2 cup lukewarm milk 120ml
  • 1/2 tsp vanilla paste or vanilla extract
  • 2 1/4 tsp fast action yeast 7g
  • 1 small pinch salt
  • 2-3 tbsp caster sugar or confectioners sugar for rolling doughnuts
  • sunflower or vegetable oil for frying
Pastry Cream
  • 5 large egg yolks
  • 2.5 cups milk ½ litre
  • 1/4 cup cornstarch 30g
  • 1/3 cup sugar 70g
  • 1/2 tsp vanilla paste or 1 vanilla bean
  • Zest of 1 lemon

Method
 

Dough Preparation
  1. Check the instructions on the yeast packet for activation.
  2. In a mixer bowl, combine flours, sugar, and yeast.
  3. Scatter butter cubes over the flour, then add eggs, lukewarm milk, vanilla, and salt.
  4. Use a dough hook on low speed to knead for 10 minutes until smooth and elastic.
  5. Tip the dough onto a clean surface and shape into a ball with minimal kneading.
  6. Place the dough in a greased bowl, cover with plastic wrap, and let prove for 2-3 hours until tripled in size.
  7. Knock air out of the risen dough, knead briefly, and roll out to a ½ inch (1.5cm) thick rectangle.
  8. Cut out 3.5 inch doughnuts using a cookie cutter and place on parchment paper. Cover and prove for 1-1.5 hours.
Pastry Cream Preparation
  1. Prepare the pastry cream while doughnuts are proving.
  2. In a saucepan, combine egg yolks, milk, cornstarch, sugar, vanilla, and lemon zest. Cook over medium heat until thickened, whisking constantly.
Frying and Serving
  1. Heat oil in a deep pan to 170°C/337°F.
  2. Drop doughnuts into oil, remove parchment, and fry in batches for 2 minutes per side.
  3. Drain on kitchen paper for about 2 minutes, then roll in sugar and let cool before filling.
  4. To fill, make a small incision in the side of each doughnut, then pipe in pastry cream.
