Method
 

Preparation
  1. Preheat oven to 400°F (205°C) and preheat a large-rimmed baking sheet.
  2. Trim the ends and remove any discolored outer leaves.
  3. Rinse and pat dry the Brussels sprouts.
  4. Cut sprouts in half and place in a large mixing bowl.
  5. Toss with garlic, olive oil, rosemary, salt, and pepper.
Roasting
  1. Arrange cut side down on a large sheet pan and roast for about 15 minutes.
  2. Turn over and cook for another 15 minutes.
  3. Add pine nuts during the last 5 minutes of cooking time.
  4. Remove from oven, grate cheese over top, and serve immediately.
