Ingredients
  

  • 1.5 cups all purpose flour
  • 0.25 cups cornstarch
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cups oil
  • 0.25 cups melted butter
  • 1 cups granulated sugar
  • 2 eggs
  • 1 egg white
  • 0.5 cups buttermilk or substitute with 1/2 cup milk + 1 tablespoon lemon juice or vinegar
  • 1.5 to 2 tsp vanilla bean paste

Method
 

  1. Preheat oven to 350°F (conventional).
  2. Sift flour, cornstarch, baking powder, baking soda, and salt into a bowl and mix. Set aside.
  3. In a separate bowl, whisk sugar, oil, and butter for 1-2 minutes until the mixture starts to change color.
  4. Add the eggs, egg white, and vanilla, and whisk for another 1-2 minutes.
  5. Add a third of the buttermilk to the wet ingredients and whisk to combine.
  6. Add a third of the dry ingredients and fold gently with a rubber spatula until mixed in.
  7. Repeat, adding the buttermilk and dry ingredients in thirds until everything is combined.
  8. Prep a bundt pan by brushing generously with oil and dusting with granulated sugar. Pour the batter into the pan.
  9. Bake for approximately 30 minutes, until a toothpick comes out with moist crumbs attached.
  10. Let the cake rest in the pan for 10-15 minutes, then carefully turn it out.
  11. Dust with powdered sugar and serve.
