Filling
  • 24 small apricots, pitted and halved
  • 1.5 cups sugar
  • 0.25 cups flour
  • 2-3 tablespoons butter dabs on top
Crust
  • 2 discs homemade pie crust
  • sparkling sugar (Demerara) for garnishing
  • 1 large egg yolk for brushing

Method
 

Preparation
  1. Cover the bottom of the oven with foil to catch any spills from the pie.
  2. Add sugar and flour to apricots, set aside for 30 minutes to macerate.
  3. Pre-heat oven to 425°F.
  4. Roll out bottom crust pie pastry; place in 9-inch pie plate, edges hanging over lip.
  5. Roll out top crust pie pastry; rest while filling the bottom.
  6. Carefully fill pastry with apricot mixture; top with dabs of butter.
  7. Carefully place top crust over fruit; edges hanging over lip of pan.
  8. Gently roll edges of pastry together resting on the edge of the pie pan to form an ample ridge to crimp; crimp edges.
  9. Brush top with beaten egg yolk; sprinkle liberally with sparkling sugar.
  10. Slash top pastry to allow steam to escape.
  11. Place in hot oven; turn heat to 350°F after first 15 minutes and bake for another hour until bubbly, golden, fragrant, and completely irresistible.
