Bruschetta Mixture
  • 4 units Roma tomatoes cored and diced
  • ¼ cup basil leaves chopped
  • 1 clove garlic minced
  • 1 tablespoon Extra Virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Salt to taste
Cheese Mixture
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese 4 oz
  • ½ cup sour cream
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon olive oil
  • Salt to taste
Garnishes
  • Basil leaves chopped, for garnish
  • Red pepper flakes for garnish
  • Parmesan cheese freshly grated, for garnish

Method
 

Preparation
  1. Core and dice the tomatoes into small cubes.
  2. In a medium bowl, combine tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt. Toss to coat and set aside to marinate for 10 minutes.
  3. Meanwhile, make the cheese mix by adding all cheese dip ingredients into the food processor. Puree for 3-4 minutes until smooth and creamy, scraping the bowl as needed.
  4. Scoop the cheese mixture onto a shallow serving plate or bowl and top with the bruschetta dip.
  5. Sprinkle the top with red pepper flakes, parmesan cheese, and additional basil before serving.
  6. Serve with crackers, pita chips, or toasted bread.
