Ingredients

Batter Ingredients
  • 1 cup pumpkin puree
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup unsalted butter melted & cooled
  • ¼ cup vegetable oil
  • 2 large eggs room temperature
  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons pumpkin spice
  • ¾ teaspoon salt
Glaze Ingredients
  • 4 tablespoons unsalted butter for glaze
  • 1 cup powdered sugar sifted
  • 2-3 tablespoons heavy cream
  • ½ teaspoon vanilla extract

Equipment

  • Standard doughnut pans
  • mixing bowls
  • hand mixer
  • whisk
  • Saucepan
  • cooling rack

Method

Baking Instructions
  1. Preheat the oven to 350 degrees F. Spray two standard doughnut pans with floured cooking spray; set aside.
  2. In a large bowl, combine pumpkin, sugars, butter, oil, and eggs. Use a hand mixer to beat until well combined.
  3. In another medium bowl, whisk together flour, baking powder, pumpkin spice, and salt. Mix dry ingredients into wet ingredients until combined.
  4. Fill the wells of the doughnut pans about 3/4 full, using about 1/4 cup of batter in each well. If desired, pipe the donuts for less mess. Gently tap pans against the counter to smooth out the batter.
  5. Bake for 14-16 minutes, or until a cake tester inserted into the center of one comes out clean. Remove from the oven and allow to cool in pans for 5 minutes, then transfer to a wire rack to cool.
  6. While the donuts are cooling, melt butter in a small saucepan over low heat for 5-7 minutes until browned.
  7. Pour browned butter into a small bowl. Whisk in powdered sugar, cream, and vanilla until completely smooth, returning to heat to further melt sugar if necessary.
  8. Dip donut tops in glaze and return to cooling rack to dry.
  9. Store leftover donuts covered at room temperature for 3-4 days.
