Ingredients
  

  • 8 ounces lump crab meat
  • 1 heaping tablespoon mayonnaise
  • 1 tablespoon Old Bay Seasoning
  • ¼ teaspoon cayenne powder optional
  • ½ cup panko plus more if needed
  • to taste salt
  • to taste pepper
  • neutral oil for greasing
  • 2 teaspoons freshly minced parsley optional, for serving

Method
 

  1. Preheat oven to 450ºF. Grease a baking sheet with neutral oil.
  2. Combine all of the ingredients in a bowl and mix to combine. Taste and add more salt and pepper if needed. If the crab meat seems very loose, add a few shakes more panko.
  3. Roll the mixture into tablespoon-sized balls, squeezing each crab ball if needed, to ensure they stay together. Place them on the greased baking sheet. Transfer to the freezer for 10 minutes.
  4. Transfer to the oven for 10 minutes. After 10 minutes, turn on the broiler and broil the tops of the crab balls until they’re golden brown and crisp on top. Remove from the oven.
  5. Arrange the crab balls on a serving platter and sprinkle fresh parsley on top. Enjoy!
