Ingredients

  • 3 large boneless skinless chicken breasts
  • 8 ounces cream cheese cubed
  • 1 cup ranch dressing
  • 1 cup hot sauce
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • ½ cup green onion chopped
  • 1.5 cups mozzarella cheese shredded, divided
  • 1.5 cups cheddar cheese shredded, divided

Equipment

  • Large pot
  • medium saucepot
  • 9x9 inch baking pan
  • whisk

Method

  1. Cook the chicken by boiling in a large pot of water for approximately 25 minutes, then remove from the pot and allow to rest until cool enough to handle.
  2. Preheat the oven to 350 degrees F and spray a 9x9-inch baking pan with non-stick cooking spray.
  3. In a medium saucepot over medium-low heat, combine cream cheese, ranch dressing, hot sauce, black pepper, and garlic powder. Whisk until the cream cheese is dissolved.
  4. Add the cooked and shredded chicken, green onion, 1 cup of mozzarella cheese, and 1 cup of cheddar cheese to the sauce pot. Mix well and transfer to the prepared baking pan. Top with remaining mozzarella and cheddar cheese.
  5. Bake for approximately 20-30 minutes, or until the cheese melts and sides bubble. Set oven to BROIL for an additional 2-3 minutes, or until the top is golden brown. Remove immediately.
  6. Serve with tortilla chips, vegetable sticks, crackers, or in a tortilla with greens.
