Preparation
- Preheat the oven to 350°F. Grease and flour a bundt pan and set it aside.
- Beat together the sugar and vegetable oil. Add the eggs.
- In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet mixture in thirds, beating to incorporate after each addition.
- Mix in the vanilla, apples, coconut, and chopped nuts.
- Transfer the batter to the prepared bundt pan, gently smoothing the top.
- Bake until a long thin bamboo skewer or toothpick inserted in the center comes out clean, 60-70 minutes.
- When cool enough to handle, gently remove from pan and let sit on a rack to cool completely.
- Stir together the glaze ingredients in a small saucepan over medium-low heat until the butter and sugar are melted.
- Prick all around the top of the cake with a fork, place the cake on a serving dish, and apply the glaze liberally.
