Method
- Use a large sheet of parchment paper to line the sides and bottom of an 8 inch or 9 inch square pan.
- Add strawberries and applesauce to a blender and blend on high speed until fully pureed and uniform in color.
- Add puree to a large heat-proof mixing bowl, sprinkle gelatin across the surface, and whisk until fully incorporated.
- Using the double boiler method, dissolve the gelatin completely, ensuring the mixture is warm but not hot. Remove from stove and cool for about 10 minutes.
- Pour mixture into the bowl of a stand mixer and beat on highest speed for about 15 minutes until it quadruples in volume and holds a soft peak.
- Pour mixture into the prepared pan, spread evenly, and smooth the surface. Place in fridge for at least 1 hour to set.
- Decorate with whipped cream frosting if desired before serving. Slice with a large sharp knife and serve chilled.
