Ingredients

Butter and Sugars
  • 1 cup salted butter, softened about 2 sticks
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 and 1/4 cups all purpose flour
Additions
  • 1 cup dark chocolate chips
  • 2 teaspoons fresh orange zest plus more for garnish
  • 1 number egg for egg wash
  • 1-2 cups turbinado sugar for rolling the dough in

Equipment

  • mixing bowl
  • mixer
  • sharp knife
  • baking sheet
  • Plastic wrap

Method

Preparation
  1. Add butter, granulated sugar, and light brown sugar to a mixing bowl. Mix for about 5 minutes until light and fluffy. Add vanilla extract and mix until just combined.
  2. Scrape down the sides and slowly add flour while the mixer is on low.
  3. Once flour is mixed in, add dark chocolate chips and orange zest, mixing until combined. The dough should be smooth and dry.
  4. Divide the dough in half and place one half on plastic wrap. Form into a circular log and roll it up in the plastic wrap. Repeat with the other half.
  5. Chill the logs of dough in the fridge for at least 2 hours or overnight. Preheat the oven to 350 degrees when chilling time is nearly up.
Baking
  1. Take one roll of dough out of the fridge, remove from plastic wrap, brush lightly with egg wash, and roll in turbinado sugar.
  2. Use a sharp knife to slice cookies about 1/2 inch thick.
  3. Place cookies on a lined baking sheet and bake for 12-14 minutes, until the edges are slightly brown. Allow to cool on the pan for 10 minutes before transferring to a cooling rack.
  4. Garnish with orange zest and flaky sea salt. Drizzle melted dark chocolate on top if desired.
  5. Repeat steps with the remaining dough.

Notes

Use chilled butter for a firmer texture that helps the cookies maintain their shape. Don't skip the chilling time; it enhances the flavor and texture. Always measure flour correctly to avoid dry cookies.
