Ingredients
  

Salad Base
  • 2 cups cooked jasmine rice cooled
  • 1 cup cucumber diced
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
  • 1 cup green onions sliced
  • 1 cup fresh cilantro chopped
Crispy Rice
  • 2 cups rice puffs
Satay Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup for vegan
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon ginger grated

Method
 

Prepare the Salad
  1. In a large bowl, combine the cooked jasmine rice, cucumber, carrots, red bell pepper, green onions, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, honey, lime juice, sesame oil, garlic, and ginger until smooth.
Combine and Serve
  1. Pour the satay dressing over the salad and toss to combine. Top with crispy rice puffs just before serving.
