  • 1/3 cup plain Greek yogurt or mayonnaise
  • 4 Tbsp sweet chili sauce
  • 2 tsp sriracha optional
Main Ingredients
  • 1 lb salmon filet chopped into bite-sized chunks
  • 1/2 cup coconut aminos
  • 1 Tbsp rice vinegar
  • 2 large cloves garlic minced
  • 1 Tbsp avocado oil for cooking
  • 3 cups cooked brown rice
  • 1 large head broccoli chopped into florets
  • 1 large ripe avocado sliced
Optional Ingredients
  • 1 tsp sriracha optional
  • 2 tsp toasted sesame oil optional
  • 1 Batch Asian Cucumber Salad prepared in advance

Method
 

Preparation
  1. Prepare the cucumber salad in a small bowl and let sit for at least 15 minutes.
  2. Cook the rice according to package instructions.
  3. In a small bowl, stir together Greek yogurt (or mayonnaise), sweet chili sauce, and sriracha to make the bang bang sauce. Refrigerate until ready.
  4. Steam, sauté, or roast the broccoli as preferred.
  5. In a small bowl, combine coconut aminos, rice vinegar, minced garlic, sriracha, and sesame oil.
Cooking
  1. Cut the salmon filet into bite-sized cubes.
  2. Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat.
  3. Place salmon chunks in the skillet skin side down and cook for 2-3 minutes until golden-brown.
  4. Flip the salmon, pour in the sauce, and cook until glazed and cooked through, about 4 to 5 minutes.
  5. Divide rice into two bowls, add cucumber salad, sautéed broccoli, and avocado.
  6. Top with cooked crispy salmon bites and drizzle with bang bang sauce.
