For the Salmon
  • 4 fillets Salmon fresh, skinless fillets
  • 2 tablespoons Olive oil or butter if preferred
For the Creamy Sauce
  • 1 cup Heavy cream for a decadent finish
  • 2 cloves Garlic minced
  • 1/2 cup Parmesan cheese freshly grated
For the Spinach
  • 4 cups Fresh spinach or frozen, well-drained
  • 1 pinch Nutmeg adds warmth
For Garnish
  • 2 wedges Lemon for a zesty kick

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Season the salmon fillets with salt and pepper.
  3. Sauté minced garlic in a pan over medium heat until fragrant, about 1 minute.
  4. Add fresh spinach to the pan and cook until wilted, roughly 3-4 minutes.
  5. Pour in heavy cream and stir gently, allowing it to simmer for 5 minutes.
  6. Nestle the salmon fillets into the creamy sauce carefully.
  7. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  8. Garnish with freshly chopped parsley before serving.
