Ingredients
  

Base Ingredients
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp kosher salt
  • 16 oz mascarpone cheese softened
  • 3/4 cup heavy cream for filling
  • 1 cup strong coffee cooled
  • 2 tbsp sugar for coffee mixture
  • 1 tbsp bourbon optional
  • 1 package savoiardi ladyfingers 7 oz
Optional Topping Ingredients
  • 3/4 cup heavy cream for topping
  • 3 tbsp powdered sugar for topping

Method
 

Preparation
  1. In a large bowl, whisk together the pumpkin, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, cloves, and salt. Add in the softened mascarpone cheese and heavy cream. Using a hand mixer, beat until the mixture forms soft peaks.
  2. Add the cooled coffee, sugar, and bourbon (if using) to a medium bowl and stir until the sugar has dissolved.
  3. Briefly dip each ladyfinger into the coffee mixture and arrange in a single layer in a 9×9 dish. Spread half of the pumpkin cream onto the ladyfingers.
  4. Repeat with another layer of ladyfingers and the remaining pumpkin cream.
  5. Refrigerate for at least 6 hours or overnight. Dust with cocoa powder or shaved chocolate and serve as desired.
Optional Topping
  1. For the whipped cream topping – In a large bowl, beat together heavy whipping cream and powdered sugar into stiff peaks. Spread or pipe whipped cream over the tiramisu as desired.
