- Preheat the oven to 375 F.
- Roll out the 2 sheets puff pastry over a floured surface into a 10 x 14-inch rectangle. Cut the puff pastry sheets evenly into 24 equal squares.
- Spray a 24-piece mini muffin pan with nonstick cooking spray and place the puff pastry squares into each one, pushing down to create cups.
- Cut the brie cheese into 24 pieces and place a piece of brie into each pastry cup.
- Add equal amounts of cranberry sauce over each brie piece.
- Add a bit of the chopped pistachios to each one.
- Bake for 18-20 minutes or until golden brown and the brie has melted.
- Allow them to cool for 5 minutes. Drizzle with honey and serve.
