Cooking Steps
- Finely mince the onions, celery, carrots, and garlic.
- Pour 3 tablespoons of olive oil into a large pot over medium heat.
- Add the minced vegetables and sauté for 4 to 6 minutes while frequently stirring.
- Add the ground pork and beef and cook until browned throughout.
- Deglaze with white wine and reduce liquid by half. Add crushed tomatoes, salt, and pepper, then simmer over low heat.
- Prepare pasta dough and roll it out, cutting into 9" to 11" long pieces. Set aside on a floured surface.
- Make béchamel sauce and keep warm over low heat.
- Boil about 6 to 7 pasta sheets at a time in salted water for 20 to 30 seconds.
- Remove pasta and set on a clean kitchen towel to separate.
- In a lasagna pan, layer a small amount of béchamel and Bolognese sauce at the bottom.
- Add a layer of cooked pasta to cover both sauces.
- Repeat layering with sauces and sprinkle with 1/4 cup mozzarella and 2 tablespoons Parmesan.
- Continue until all pasta, sauces, and cheeses are used, saving some béchamel for the top.
- Pour remaining Bolognese sauce on top and sprinkle with remaining cheeses.
- Bake at 400°F for 35 to 40 minutes or until browned and crispy.
- Let lasagna sit at room temperature for 10 to 15 minutes before slicing and serving.
