Ingredients
  

  • 1 1/3 cups Warm Water
  • 2 1/4 tsp Instant Quick Rise Yeast
  • 1 tbsp Granulated Sugar
  • 3 1/2 cups Bread Flour
  • 1 1/2 tsp Salt
  • 6-8 cups Boiling Water
  • 1 tbsp Baking Soda
  • 1 tbsp Honey
  • 1 Large Egg
  • 1 tbsp Water
  • Everything Bagel Seasoning optional

Method
 

  1. In a large mixing bowl, whisk together the warm water, instant yeast, and granulated sugar. Let it sit for 5-10 minutes until foamy.
  2. Add in the bread flour and salt, and mix until the dough forms a thick, dry, and scaly texture. Knead the dough on a floured surface until soft and smooth (5-7 minutes).
  3. Shape the dough into a ball and place it in a greased bowl. Cover with a towel and let it rest for 60-90 minutes.
  4. Preheat the oven to 425ºF and prepare a baking sheet lined with a silicone mat or parchment paper.
  5. Cut the dough into 8 equal pieces and roll each piece into a ball. Create a hole in each ball with your thumb and pointer finger and stretch slightly. Let them rest for about 10 minutes.
  6. Bring a large pot of water to a boil, adding baking soda and honey. Prepare the egg wash mixture at this time and set aside.
  7. Place 3-4 bagels in the boiling water bath for no more than 1 minute per side. Remove and let excess water drip off before placing back on the baking sheet. Repeat for all bagels.
  8. Brush each bagel with the egg wash and sprinkle with everything bagel seasoning if desired.
  9. Bake for 20-25 minutes at 425ºF until golden brown. Let cool for 5 minutes before transferring to a wire rack.
