Pasta
  • 1 pound dried fettuccine pasta
Sauce
  • 4 tablespoons unsalted butter
  • 2 cups heavy cream
  • 2 cloves garlic finely grated or minced
  • 0.75 teaspoon kosher salt plus more as needed
  • 0.25 teaspoon freshly grated nutmeg
  • 0.25 teaspoon freshly ground black pepper
Garnish
  • Coarsely chopped parsley leaves for garnish (optional)

Method
 

Cooking Process
  1. Bring a large pot of heavily salted water to a boil. Finely grate the Parmesan cheese and Pecorino Romano cheese.
  2. Add the dried fettuccine to the boiling water. Cook according to package directions until al dente, about 8 to 10 minutes. Reserve 3/4 cup of the pasta water, then drain the pasta.
  3. Melt the unsalted butter in a large skillet over medium heat. Stir in the grated Parmesan, Pecorino Romano cheese, heavy cream, minced garlic, kosher salt, nutmeg, and black pepper. Simmer, stirring frequently, until the sauce thickens, about 3 to 5 minutes.
  4. Add the pasta and 1/4 cup of the reserved pasta water and toss to coat. Add more reserved pasta water a tablespoon at a time as needed for a saucy consistency. Taste and season with kosher salt if needed. Garnish with parsley and more Parmesan as desired.
