Ingredients
  

Salad Base
  • 2 cups shredded cooked chicken rotisserie chicken works well
  • 4 cups mixed salad greens such as romaine and spinach
  • 1 cup shredded carrots
  • 1 cup cabbage shredded
  • 1 cup sliced bell pepper any color
  • 1/2 cup green onions sliced
  • 1/2 cup slivered almonds toasted
Dressing
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, mixed salad greens, shredded carrots, cabbage, bell pepper, green onions, and slivered almonds.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately.
