Ingredients
  

For the Enchiladas
  • 2 cups shredded cooked chicken shredded rotisserie chicken works beautifully
  • 8 corn tortillas soft, pliable tortillas
  • 2 cups green enchilada sauce homemade or store-bought
  • 1 cup shredded cheese mix of Monterey Jack and cheddar
For the Toppings
  • 1 cup sour cream adds a creamy balance
  • 1/2 cup chopped cilantro fresh herbs
  • 1/4 cup sliced jalapeños for extra heat

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the green sauce by blending fresh tomatillos, jalapeños, garlic, and cilantro until smooth.
  3. Cook the chicken in a skillet over medium heat until fully cooked, about 10-12 minutes. Shred it using two forks.
  4. Mix the shredded chicken with some cheese and a portion of your prepared green sauce in a bowl.
  5. Fill each tortilla with a scoop of the chicken mixture, rolling them tightly and placing seam-side down in a greased baking dish.
  6. Cover the rolled enchiladas with the remaining green sauce and sprinkle extra cheese on top.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and golden brown.
