Ingredients
  

Pasta
  • 8 oz penne pasta
Meat
  • 1 lb ground beef can substitute with turkey or chicken
Sauce
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1 cup diced tomatoes canned or fresh
Toppings
  • 1/2 cup green onions chopped
  • 1/2 cup jalapeños sliced, optional

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare Meat
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the taco seasoning and diced tomatoes to the skillet. Stir to combine and cook for an additional 5 minutes.
Combine Ingredients
  1. Reduce heat to low and add the cream cheese and sour cream to the meat mixture. Stir until melted and combined.
  2. Add the cooked pasta to the skillet and mix until the pasta is well coated with the sauce.
  3. Stir in the shredded cheddar cheese until melted and creamy.
Serve
  1. Serve hot, garnished with chopped green onions and jalapeños if desired.
