Ingredients
  

For the Salad
  • 1 cup tiny pasta (ditalini or orzo)
  • 2 cups Swiss chard or spinach if needed
  • 1 cup cherry tomatoes or heirloom tomatoes
  • 1 cup cucumber preferably English
For the Dressing
  • 1/4 cup olive oil extra virgin is best
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • to taste salt
  • to taste pepper
For Garnish
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh herbs basil or parsley, chopped

Method
 

Preparation
  1. Bring a pot of salted water to a boil and add your tiny pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add chopped chard and cook for 3-4 minutes until it’s wilted and vibrant green.
  3. Toss in diced bell peppers, cherry tomatoes, and red onion with the chard. Stir occasionally for another 2-3 minutes, allowing flavors to meld together beautifully.
  4. Drain the pasta and add it to the skillet with the sautéed veggies. Gently mix everything together, ensuring each piece is coated in the colorful mixture.
  5. Drizzle your favorite vinaigrette over the warm pasta salad. Stir well to combine all ingredients, allowing the dressing to enhance every bite.
  6. Transfer your Chard Tiny Pasta Salad to a serving bowl or platter, and top with crumbled feta cheese for an extra touch of flavor!
