Ingredients
  

For the Salad
  • 1 cup tiny pasta small shapes like orzo or ditalini
  • 2 cups Swiss chard washed and chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion soaked in water to mellow flavor
For the Dressing
  • 1/4 cup olive oil extra virgin recommended
  • 2 tablespoons lemon juice fresh-squeezed
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, wash and chop the Swiss chard into bite-sized pieces.
  3. In a skillet over medium heat, warm a drizzle of olive oil and sauté the chopped chard for about 3-4 minutes until wilted.
  4. Drain the pasta and return it to the pot. Stir in the sautéed chard, salt, and pepper.
  5. Drizzle the dressing over the mixture and toss until everything is well-coated.
  6. Serve warm or chill in the fridge for an hour before serving.
