Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 2 cups milk dairy or non-dairy
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins optional
Toppings
  • 1/4 cup chopped walnuts optional
  • 1/4 cup coconut flakes optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the milk, maple syrup, and vanilla extract.
  4. Add the grated carrots and raisins to the wet ingredients and mix well.
  5. Pour the wet mixture into the dry ingredients and stir until combined.
  6. Transfer the mixture to the greased baking dish and spread evenly.
  7. Sprinkle chopped walnuts and coconut flakes on top if desired.
Baking
  1. Bake in the preheated oven for 30 minutes or until the top is golden brown.
  2. Allow to cool for a few minutes before serving.
