Carnitas Crockpot

Ingredients
  

Pork
  • 3 pounds pork shoulder cut into large chunks
Spices
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Aromatics
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 1 orange juiced
  • 1 lime juiced
Liquid
  • 1 cup chicken broth

Method
 

Preparation
  1. In a large bowl, combine the spices: cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Rub the spice mixture all over the pork shoulder pieces.
  2. Place the chopped onion, minced garlic, orange juice, lime juice, and chicken broth in the bottom of the crockpot.
  3. Add the seasoned pork shoulder on top of the aromatics in the crockpot.
Cooking
  1. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.
  2. Once cooked, remove the pork from the crockpot and shred it using two forks.
  3. Optional: For crispy edges, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes.
Serving
  1. Serve the carnitas in tacos, burritos, or on a platter with your favorite toppings.

Notes

Carnitas can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
