  • 1.5 cups warm water (360ml)
  • 2.25 teaspoons instant or active dry yeast (7g)
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter (14g, melted and slightly cool)
  • 3.75-4 cups all-purpose flour (469-500g, plus more for hands and work surface)
Boiling Solution
  • 0.5 cups baking soda (120g)
  • 9 cups water (2,160ml)
Topping
  • coarse salt or coarse sea salt

Method
 

Dough Preparation
  1. Whisk warm water, yeast, and sugar together in a mixing bowl. Cover and let sit for 5 minutes until foamy.
  2. Add salt, melted butter, and 3 cups of flour. Beat on low speed for 1 minute, then add 3/4 cup of flour and beat until the dough pulls away from the sides, about 2 minutes.
  3. Knead the dough in the mixer for an additional 5 minutes, or knead by hand until soft and slightly tacky. Allow to rest for 10-30 minutes.
Boiling and Baking
  1. Preheat oven to 400°F (204°C) and line baking sheets with parchment paper or silicone mats.
  2. Cut dough into 6 pieces. Roll each piece into a 20-inch rope and cut into 1.5 – 2 inch pieces to make bites.
  3. Mix water and baking soda in a pot and bring to a boil. Boil 8-10 pretzel bites for 10-15 seconds. Remove and allow excess water to drip off before placing on prepared sheets. Sprinkle with coarse salt if desired.
  4. Bake for 15 minutes or until golden brown. Remove from the oven and serve warm.
