Ingredients
  

Base
  • 2 cups cooked rice white or brown
  • 1 can black beans drained and rinsed
Protein
  • 1 lb chicken breast diced
  • 1 tbsp olive oil for cooking
Toppings
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 avocado sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup cilantro chopped
Seasoning
  • 1 tbsp taco seasoning or to taste

Method
 

Cook the Protein
  1. Heat olive oil in a skillet over medium heat. Add diced chicken and taco seasoning, cooking until chicken is fully cooked and no longer pink, about 7-10 minutes.
Prepare the Base
  1. In a large pot, combine cooked rice and black beans. Heat over low until warmed through, about 5 minutes.
Assemble the Bowl
  1. In serving bowls, layer the rice and bean mixture, followed by the cooked chicken, corn, cherry tomatoes, lettuce, avocado, cheese, sour cream, and cilantro.
