Ingredients
  

For the Cookie Dough
  • 2 cups all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
For the Filling
  • 1/2 cup fruit preserves or jam raspberry or strawberry recommended
  • 1 teaspoon cinnamon optional
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk or cream adjust for consistency
  • sprinkles optional

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine flour, baking powder, and salt in a bowl. Whisk them together until well-mixed.
  3. Cream butter and brown sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
  4. Add eggs and vanilla extract to the butter mixture. Beat until fully incorporated.
  5. Mix the dry ingredients into the wet mixture gradually. Stir just until combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are golden brown and the centers look set but still soft.
  8. Cool the cookies on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
  9. For the Glaze: Mix powdered sugar with milk or cream to achieve desired consistency.
