Preparation
- Preheat your oven to 400℉ (or 200℃).
- In a skillet, cook the bacon until crispy and drain on to paper towel. Once cool, finely chop into small pieces.
- Arrange the chicken on a rimmed metal baking sheet, drizzle with olive oil, and toss to coat. Season both sides with lemon pepper seasoning.
- Bake the chicken for 18 to 20 minutes or until fully cooked. Remove the chicken to a cutting board and let rest for 5 minutes before shredding.
- In a bowl, combine the shredded chicken with 1/2 to 3/4 cup of barbecue sauce and toss to coat.
- Reduce the oven temperature to 325℉ (or 160℃).
- On a clean rimmed metal baking sheet, arrange the chips in a single layer. Top with a light sprinkle of cheese, then scatter the barbecue chicken over top.
- Add more cheese, red onion, and chopped bacon. Drizzle some extra barbecue sauce over the top.
- Bake for 10 to 15 minutes or until the cheese has melted and the barbecue sauce is caramelized.
- Sprinkle with cilantro and serve immediately.
