Method
- Preheat your waffle iron, using a round Belgian waffle maker.
- In a stand mixer, add the two egg whites and beat to stiff peaks on high.
- Carefully transfer the egg whites to another bowl.
- In the stand mixer, add the egg yolks, vanilla, buttermilk, and melted butter; mix until well blended.
- Add the flour, baking powder, baking soda, sugar, and salt; combine.
- Divide the batter into six bowls; color each with a different gel food coloring, using increasing amounts from red to purple.
- Gently fold an equal ratio of egg whites into each bowl of batter.
- Transfer each colored batter to ziploc piping bags.
- Pipe colors in circles around the waffle iron, starting with red on the outside and ending with purple in the center.
- Cook the waffles for about 75-80% of the normal cooking time, avoiding excessive browning.
- Garnish with whipped cream and Rolo candies.
