Ingredients
  

Salmon
  • 1 lb salmon fillet skinless
Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red cabbage shredded
  • 1 cup edamame shelled
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp lime juice freshly squeezed
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds

Method
 

Prepare the Salmon
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillet on the baking sheet and season with salt and pepper.
  3. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
Make the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowls
  1. In each bowl, add a serving of cooked rice as the base.
  2. Top with sliced cucumber, shredded carrots, red cabbage, and edamame.
  3. Flake the baked salmon over the top and drizzle with the bang bang sauce.
  4. Garnish with sliced green onions and sesame seeds.
