Ingredients
  

Truffle Base
  • 1 cup vanilla wafers crushed
  • 1 cup cream cheese softened
  • 1/2 cup banana mashed
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
Coating
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil for melting
Garnish
  • 1/4 cup crushed vanilla wafers for rolling

Method
 

Prepare the Truffle Mixture
  1. In a mixing bowl, combine crushed vanilla wafers, cream cheese, mashed banana, powdered sugar, and vanilla extract. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm up.
Form the Truffles
  1. Once chilled, scoop out small portions of the mixture and roll them into balls.
  2. Place the truffles on a cookie sheet lined with parchment paper.
Coat the Truffles
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.
  2. Dip each truffle into the melted chocolate, ensuring they are fully coated, then roll in crushed vanilla wafers.
  3. Return the coated truffles to the cookie sheet and refrigerate until the chocolate is set.
