Ingredients
  

  • 15 ounces canned pure pumpkin puree
  • ¾ cup white granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup canola oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 ¾ teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 stick butter melted
  • 1 cup granulated sugar for topping
  • 1 tablespoon ground cinnamon for topping

Method
 

Preparation
  1. Preheat the oven to 350℉ and spray the donut pan with non-stick cooking spray.
  2. In a medium mixing bowl, whisk together the pumpkin puree, white and brown sugars, oil, eggs, and vanilla until there are no lumps.
  3. In a large mixing bowl, mix together the all-purpose flour, pumpkin pie spice, cinnamon, salt, baking soda, and baking powder.
  4. Pour the pumpkin mixture into the dry ingredients and stir just until combined; do not over mix.
  5. Spoon or pipe the batter into the donut pans, filling them ¾ full. Tap the pan gently on the counter and place in the oven to bake for 10 minutes.
  6. Remove the donuts from the oven. Turn the pan over onto a cooling rack to release the donuts, using a knife if necessary.
  7. In a shallow bowl, mix together ground cinnamon and sugar. Brush or dip each donut in melted butter, then coat in the cinnamon sugar mixture.
  8. Place the donuts onto a serving tray and serve.

Notes

Feel free to substitute canola oil with melted coconut oil or use maple syrup instead of granulated sugar for a unique twist. Donuts can be stored in an airtight container for up to three days or refrigerated for longer freshness.
