For the Salad
  • 1 lb Baby potatoes diced
  • 2 cups Arugula fresh
  • 1 cup Cherry tomatoes halved
  • 1 small Red onion thinly sliced
For the Arugula Pesto
  • 2 cups Fresh arugula
  • 1/4 cup Pine nuts or walnuts
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup Olive oil
  • 1-2 cloves Garlic
  • 2 tbsp Lemon juice

Method
 

Preparation
  1. Start by placing your diced potatoes into a large pot of salted water. Bring it to a boil and cook for about 10-12 minutes, or until they are fork-tender but still firm.
  2. Once the potatoes are cooked, drain them in a colander and let them cool completely.
  3. In a food processor, combine fresh arugula, garlic, pine nuts, Parmesan cheese, and olive oil. Blend until smooth and vibrant green, adjusting seasoning with salt and pepper to taste.
  4. In a large bowl, gently toss the cooled potatoes with the arugula pesto until they are well-coated.
  5. Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together perfectly.
