Ingredients
  

  • 8-10 slices Bacon cut into pieces after cooking
  • 1 tablespoon Butter or Olive Oil for sautéing
  • 1 large Onion diced
  • 2 large Carrots peeled and sliced into small pieces
  • 4 cups Chicken Broth
  • 1-2 teaspoons Salt to taste
  • 1 teaspoon Pepper to taste
  • 1 teaspoon Garlic Powder or 4 cloves minced garlic
  • 1/4 teaspoon Dried Thyme
  • 1/2-1 teaspoon Red Chili Flakes to taste
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese grated

Method
 

  1. Cook bacon until crispy. Once cooled, cut into small pieces and set aside.
  2. Heat a large pot over medium heat. Add butter or olive oil, then add onions and carrots. Cook until tender, about 10-15 minutes.
  3. Add chicken broth to the pot and let simmer.
  4. Once the vegetables are soft, reduce heat to medium-low and add heavy cream or half-n-half, along with all of the spices. Let simmer until it starts to reduce slightly; do not boil.
  5. Add grated cheese in increments to prevent clumping. Let cheese melt completely.
  6. Stir in gnocchi and cook for 2 minutes. Taste and adjust seasonings with more salt and pepper as needed.
  7. Add bacon pieces to the soup before serving.
