- 4 lbs beef short ribs
- 2 tbsp paprika
- 1 tbsp garlic powder
- 2 tbsp brown sugar
- 1 tsp cayenne pepper
- 2 cups hickory or mesquite wood chips (soaked)
- 1 cup apple cider vinegar
- 1 cup barbecue sauce
Instructions
- Remove the silver skin from the back of the ribs and pat dry.
- In a bowl, mix paprika, garlic powder, brown sugar, and cayenne; generously rub this mixture onto both sides of the ribs.
- Preheat your smoker to 225°F (107°C) and add soaked wood chips.
- Place the ribs bone-side down in the smoker; smoke for approximately 6 hours.
- Every hour, spritz with apple cider vinegar to maintain moisture.
- After six hours, brush on barbecue sauce and cook for an additional hour until sticky.
