  • 4 lbs beef short ribs
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 2 cups hickory or mesquite wood chips (soaked)
  • 1 cup apple cider vinegar
  • 1 cup barbecue sauce

Instructions

  1. Remove the silver skin from the back of the ribs and pat dry.
  2. In a bowl, mix paprika, garlic powder, brown sugar, and cayenne; generously rub this mixture onto both sides of the ribs.
  3. Preheat your smoker to 225°F (107°C) and add soaked wood chips.
  4. Place the ribs bone-side down in the smoker; smoke for approximately 6 hours.
  5. Every hour, spritz with apple cider vinegar to maintain moisture.
  6. After six hours, brush on barbecue sauce and cook for an additional hour until sticky.
