  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 2 tbsp curry powder
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 cup jasmine rice

Instructions

  1. 1. Rinse jasmine rice under cold water until clear. Combine with 2 cups of water in a saucepan, bring to a boil, cover, and simmer for about 15 minutes until fluffy.
  2. 2. In a large skillet over medium heat, add oil and sauté minced garlic and grated ginger for about one minute until fragrant.
  3. 3. Stir in curry powder and cook for another minute.
  4. 4. Pour in coconut milk and vegetable broth; stir to combine and let simmer.
