  • 1 large Napa cabbage (about 2 lbs)
  • 1/2 cup sea salt
  • 1/2 cup Korean red pepper flakes (gochugaru)
  • 10 cloves garlic, minced
  • 2 inches fresh ginger, grated
  • 1 tbsp sugar
  • 3 green onions, finely chopped
  • 3 tbsp fish sauce

Instructions

  1. Chop the Napa cabbage into quarters, remove the core, and slice into bite-sized pieces. Sprinkle with sea salt and let it sit for 2 hours.
  2. Rinse the cabbage under cold water to remove excess salt and drain.
  3. In a bowl, mix garlic, ginger, sugar, fish sauce, and Korean red pepper flakes until it forms a paste.
  4. Combine the drained cabbage with green onions in a large bowl; add the spicy paste and mix well using gloves.
  5. Pack the mixture tightly into clean jars or containers, leaving an inch of space at the top.
  6. Let ferment at room temperature for 1 to 5 days; taste daily until desired tanginess is reached.
  7. Refrigerate to slow fermentation; serve chilled or at room temperature.
