- 3–4 lbs chuck roast
- 1 packet (1 oz) ranch dressing mix
- 1 packet (1 oz) au jus gravy mix
- 6 pepperoncini peppers (or banana peppers)
- 2 tbsp unsalted butter
Instructions
- Preheat your Traeger smoker to 225°F (107°C).
- Season the chuck roast generously with salt and pepper.
- Sear the roast on all sides directly on the grill for about 3-4 minutes until browned.
- Remove the roast, place it on aluminum foil, and sprinkle ranch dressing mix and au jus gravy mix over it. Top with sliced peppers and butter, then wrap tightly in foil.
- Return the wrapped roast to the Traeger and cook for 6-8 hours until it reaches an internal temperature of at least 190°F (88°C).
- Carefully unwrap the pot roast, shred or slice, and drizzle with juices before serving.
