  • 34 lbs corned beef brisket
  • 1 medium head of green cabbage
  • 4 large carrots
  • 6 medium Yukon Gold potatoes
  • 2 medium onions
  • Low-sodium beef broth
  • Seasoning packet (mustard seeds, black peppercorns, bay leaves)

Instructions

  1. Wash and chop the vegetables: cut carrots into bite-sized pieces, quarter the onions and potatoes.
  2. Rinse the corned beef under cold water to remove excess salt, then place it in a large pot.
  3. Pour enough beef broth into the pot to cover two-thirds of the meat; add the spice packet.
  4. Bring to a boil over medium-high heat; once boiling, reduce heat to low and simmer for 2 hours.
  5. After 2 hours, add chopped potatoes, carrots, onion quarters, and wedge in cabbage on top. Cover and cook for an additional hour until tender.
  6. Remove corned beef from the pot and let it rest before slicing against the grain. Serve with vegetables on warm plates.
