- 3–4 lbs corned beef brisket
- 1 medium head of green cabbage
- 4 large carrots
- 6 medium Yukon Gold potatoes
- 2 medium onions
- Low-sodium beef broth
- Seasoning packet (mustard seeds, black peppercorns, bay leaves)
Instructions
- Wash and chop the vegetables: cut carrots into bite-sized pieces, quarter the onions and potatoes.
- Rinse the corned beef under cold water to remove excess salt, then place it in a large pot.
- Pour enough beef broth into the pot to cover two-thirds of the meat; add the spice packet.
- Bring to a boil over medium-high heat; once boiling, reduce heat to low and simmer for 2 hours.
- After 2 hours, add chopped potatoes, carrots, onion quarters, and wedge in cabbage on top. Cover and cook for an additional hour until tender.
- Remove corned beef from the pot and let it rest before slicing against the grain. Serve with vegetables on warm plates.
