  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 medium onion, chopped
  • Optional toppings: sour cream and fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with chopped onion for about 6-8 minutes. Drain excess fat.
  3. Stir in half of the enchilada sauce and season with salt and pepper; mix well.
  4. Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with additional cheese.
