Ingredients

  • 4 cups seedless watermelon, cubed (about 1 small melon)
  • 1 cup cucumber, peeled and diced
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup fresh mint leaves
  • 2 tbsp olive oil

Instructions

  1. Chop the watermelon into cubes and dice the cucumber, red bell pepper, and red onion.
  2. In a blender, combine watermelon, cucumber, red bell pepper, red onion, lime juice, mint leaves, and olive oil. Blend until smooth.
  3. Taste and adjust seasoning with additional lime juice or salt if needed. If too thick, add cold water until desired consistency is achieved.
  4. Chill the gazpacho in the refrigerator for at least 1 hour to allow flavors to meld.
  5. Serve chilled in bowls garnished with extra mint leaves or diced cucumber.
