Ingredients

  • 4 cups seedless watermelon, chopped
  • 1 cup full-fat coconut milk (unsweetened)
  • 2 tbsp honey or maple syrup (to taste)
  • 2 tbsp fresh lime juice

Instructions

  1. Cut the watermelon into chunks and remove any seeds. Blend the watermelon with lime juice until smooth.
  2. Pour the watermelon mixture halfway into popsicle molds.
  3. Rinse the blender, then combine coconut milk with honey or maple syrup; blend until well mixed.
  4. Carefully pour the coconut layer over the watermelon mixture in each mold.
  5. Insert popsicle sticks and freeze for at least 4 hours or until solid.
  6. To release the popsicles, run warm water over the outside of the molds briefly before serving.
