  • 4 cups fresh baby spinach
  • 1 cup ripe strawberries, sliced
  • ¼ small red onion, thinly sliced
  • ¾ cup crumbled feta cheese
  • ½ cup pecans or walnuts, toasted
  • 3 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the spinach thoroughly. Slice the strawberries and set aside.
  2. Thinly slice the red onion; soak in cold water for 5 minutes if desired to reduce sharpness.
  3. Toast the pecans or walnuts in a dry skillet over medium heat for about 3–4 minutes until fragrant.
  4. In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper until well combined.
  5. In a large mixing bowl, combine spinach, strawberries, red onions, feta cheese, and toasted nuts. Drizzle with dressing and toss gently until evenly coated.
