- 1 cup green or brown lentils
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion, finely chopped
- 1 bell pepper, diced (any color)
- 1/2 cup feta cheese, crumbled
- 4 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water. Bring to a boil, reduce heat, and simmer for 20-25 minutes until tender but firm. Drain and let cool.
- While lentils cook, chop cucumber, cherry tomatoes, red onion, and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
- In a large bowl, mix cooled lentils with chopped vegetables. Pour dressing over them and toss gently.
- Sprinkle crumbled feta on top and lightly fold to combine.
- Serve immediately or refrigerate for flavors to meld.
