  • 1 large cucumber, thinly sliced
  • 8 slices white bread, crusts removed
  • 4 tablespoons unsalted butter, softened
  • 4 oz cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped

Instructions

  1. Wash and dry the cucumber. Slice it thinly (about 1/8 inch) for maximum crunch.
  2. In a bowl, mix the softened cream cheese with the chopped dill. Add salt and pepper to taste.
  3. Spread a generous layer of butter on one side of each slice of bread.
  4. On half of the buttered slices, spread the cream cheese mixture evenly and layer cucumber slices on top.
  5. Place the remaining buttered bread slices on top, buttered side facing out, and gently press down.
  6. Cut off the crusts if desired and slice each sandwich into quarters or triangles for serving.
