- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers (mixed colors), diced
- 1/2 small red onion, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water until cool.
- While pasta cools, chop cherry tomatoes, cucumber, bell peppers, and red onion.
- In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
- In a large bowl, combine cooled pasta with chopped veggies. Pour dressing over and toss gently to coat.
- Cover and refrigerate for at least one hour before serving.
